Tannin
Bitter substances that originate from grape skins, grape seeds and stems. Also called tannic acid. Tannin gives the wine durability and is known as the dry sensation in the mouth. Red wine contains more tannin than white wine. White wine typically has 30 mg/litre, while red wine has around 1800 mg/litre.
